Summer Squash Pasta Primavera
Pasta tossed with tender squash, tomatoes, garlic and basil.
Ingredients
- 12 oz penne
- 2 small zucchini, sliced
- 2 small yellow squash, sliced
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, sliced
- 1/4 cup olive oil
- 1/2 cup grated parmesan
- 1/2 cup torn basil
Make it
- Cook pasta, reserving 1/2 cup water.
- Saute squash in oil 5 minutes, then add garlic and tomatoes for 2 minutes.
- Toss with pasta, parmesan, basil and splashes of pasta water.
