Smothered Pork Chops
Seared pork chops simmered in a rich onion gravy, perfect over rice.
Ingredients
- 4 boneless pork chops, 3/4 inch thick
- 1/3 cup all-purpose flour
- 1 large onion, sliced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 2 tbsp butter
- 1 tsp paprika
- Salt and pepper
Make it
- Season chops with paprika, salt and pepper, dust in flour and brown in butter 3 minutes per side; set aside.
- Cook onion in the same pan 8 minutes, add garlic and 2 tbsp leftover flour, then whisk in broth.
- Return chops, cover and simmer 8 to 10 minutes until 145°F; rest 3 minutes and spoon gravy over.
