Pea Shoot and Radish Spring Rolls
Fresh rice paper rolls packed with crisp sprouts, herbs and a peanut dip.
Ingredients
- 8 rice paper wrappers
- 2 cups pea shoots or sprouts
- 4 radishes, thinly sliced
- 1 carrot, julienned
- 1 cup cooked rice noodles
- 1/2 cup mint and cilantro
- 1/4 cup peanut butter whisked with soy sauce, lime and warm water
Make it
- Dip a wrapper in warm water for 10 seconds and lay flat.
- Add noodles, vegetables, shoots and herbs, fold in the sides and roll up tightly.
- Repeat and serve with the peanut dipping sauce.
