Shrimp and Grits
Garlicky, peppery shrimp spooned over buttery, cheesy grits.
Ingredients
- 1 lb shrimp, peeled and deveined
- 1 cup quick or stone-ground grits
- 1 cup shredded cheddar
- 2 tbsp butter
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 1 tsp Cajun seasoning
- 2 green onions, sliced
Make it
- Cook grits in 4 cups salted water until creamy, then stir in butter and cheese.
- Saute pepper in a little oil 3 minutes, add shrimp, garlic and Cajun seasoning, and cook 3 to 4 minutes until pink and opaque.
- Spoon shrimp over grits and top with green onions.
