Jerk Chicken Thighs
Spicy, fragrant jerk-marinated chicken roasted until charred at the edges.
Ingredients
- 8 bone-in chicken thighs
- 4 green onions
- 1 to 2 scotch bonnet peppers, seeded
- 3 cloves garlic
- 1 tbsp allspice
- 1 tsp dried thyme
- 2 tbsp soy sauce
- 2 tbsp lime juice
Make it
- Blend onions, peppers, garlic, allspice, thyme, soy, lime and 1 tsp salt into a paste (wear gloves).
- Coat chicken and marinate at least 30 minutes, or overnight in the fridge.
- Roast at 425°F or grill 35 to 40 minutes until charred and 165°F inside.
