Oven-roasted tomatoes blended into a silky soup with fresh basil.
Ingredients
- 3 lb ripe tomatoes, halved
- 1 onion, quartered
- 6 cloves garlic
- 3 tbsp olive oil
- 2 cups vegetable broth
- 1/2 cup fresh basil leaves
- Salt and pepper
Make it
- Roast tomatoes, onion and garlic with oil and salt at 425°F for 35 minutes.
- Transfer to a pot with broth and simmer 5 minutes.
- Add basil and blend until smooth; season to taste.
