Banana Pudding Cups

Layers of homemade cooked vanilla pudding, ripe bananas and soft wafer cookies.

Ingredients

  • 2 1/2 cups whole milk
  • 1/2 cup sugar
  • 3 tbsp cornstarch
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • 3 ripe bananas, sliced
  • 2 cups vanilla wafer cookies
  • Whipped cream to top

Make it

  1. Whisk milk, sugar, cornstarch and yolks in a saucepan; cook over medium, stirring, until thick and bubbling for 1 minute.
  2. Stir in vanilla and chill 30 minutes with plastic on the surface.
  3. Layer pudding, bananas and wafers in cups and top with whipped cream.
