Oven-roasted tomatoes blended into a silky soup with fresh basil.

Ingredients

  • 3 lb ripe tomatoes, halved
  • 1 onion, quartered
  • 6 cloves garlic
  • 3 tbsp olive oil
  • 2 cups vegetable broth
  • 1/2 cup fresh basil leaves
  • Salt and pepper

Make it

  1. Roast tomatoes, onion and garlic with oil and salt at 425°F for 35 minutes.
  2. Transfer to a pot with broth and simmer 5 minutes.
  3. Add basil and blend until smooth; season to taste.
