Teriyaki Chicken Skewers

Glossy, homemade teriyaki chicken on skewers, great off the grill or broiler.

Ingredients

  • 1 1/2 lb boneless chicken thighs, cubed
  • 1/3 cup soy sauce
  • 3 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp grated ginger
  • 2 cloves garlic, grated
  • 1 tsp cornstarch mixed with 1 tbsp water

Make it

  1. Simmer soy, honey, vinegar, ginger and garlic; stir in cornstarch slurry until glossy. Set half aside.
  2. Thread chicken on skewers and grill or broil 10 to 12 minutes, turning and brushing with sauce, until 165°F.
  3. Serve with the reserved clean sauce for drizzling.
