Ingredients

  • 1 cup honey
  • 3 sprigs fresh rosemary or thyme, fully dried after rinsing
  • 1 strip lemon peel
  • 4 black peppercorns (optional)
  • 1 clean 8-oz jar

Make it

  1. Gently warm honey in a small pot until runny; do not boil.
  2. Add herbs and lemon peel, steep off heat 1 hour, then strain out all solids.
  3. Store in a clean jar and use within 1 month.
