Coconut Curry Shrimp

Island-style curry with shrimp, potatoes and peppers in coconut milk.

Ingredients

  • 1 lb shrimp, peeled
  • 1 can (13.5 oz) coconut milk
  • 2 tbsp curry powder
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 large potato, diced small
  • 2 cloves garlic
  • 2 sprigs thyme

Make it

  1. Toast curry powder in oil 1 minute, then add onion, garlic and pepper and cook 4 minutes.
  2. Add potato, coconut milk, thyme and 1/2 cup water; simmer 15 minutes until potato is tender.
  3. Stir in shrimp and simmer 3 to 4 minutes until pink and opaque.
