Creamy red beans simmered with smoked sausage, peppers and Cajun spice.
Ingredients
- 2 cans (15 oz) red kidney beans, with liquid
- 12 oz smoked sausage, sliced
- 1 onion, diced
- 1 green bell pepper, diced
- 2 celery ribs, diced
- 2 tsp Cajun seasoning
- 2 cups chicken broth
- 4 cups cooked rice
Make it
- Brown sausage in a pot, then add onion, pepper and celery and cook 6 minutes.
- Add beans, broth and seasoning; simmer 25 minutes, mashing some beans to thicken.
- Serve over rice with hot sauce.
