Fudge Place

Ingredients

• 1 lb ground beef or pork
• 1/3 cup breadcrumbs
• 1/4 cup grated parmesan
• 1 large egg
• 8 cups chicken broth
• 3/4 cup small pasta
• 4 cups chopped escarole or spinach
• 1 carrot, diced

Make it

1. Mix meat, breadcrumbs, parmesan, egg and salt; roll into 3/4-inch balls.
2. Bring broth and carrot to a simmer, drop in meatballs and pasta, and cook 10 minutes until meatballs reach 160°F.
3. Stir in greens until wilted and season to taste.
