Loaded Sweet Potato Fries
Crispy baked sweet potato fries piled with black beans, salsa and lime crema.
Ingredients
- 3 sweet potatoes, cut into fries
- 2 tbsp cornstarch
- 3 tbsp olive oil
- 1 tsp smoked paprika
- 1 cup black beans, warmed
- 1/2 cup pico de gallo
- 1/3 cup vegan sour cream with lime
Make it
- Heat oven to 425°F. Toss fries with cornstarch, then oil, paprika and salt.
- Spread in a single layer and bake 25 to 30 minutes, flipping once, until crisp.
- Top with beans, pico and lime crema.
