Sheet Pan Veggie Frittata

One pan feeds a crowd with eggs, roasted vegetables and melty cheese.

Ingredients

  • 12 large eggs
  • 1 cup milk
  • 2 cups chopped zucchini
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach
  • 1 cup shredded mozzarella
  • 1 tsp salt
  • 1 tbsp olive oil

Make it

  1. Heat oven to 375°F and oil a rimmed sheet pan.
  2. Spread zucchini, tomatoes and spinach on the pan; whisk eggs, milk and salt and pour over, then top with cheese.
  3. Bake 20 to 25 minutes until the center is firm and reads 160°F. Cool 5 minutes and cut into squares.
