Rice and Peas
Fluffy coconut rice with kidney beans, thyme and allspice.
Ingredients
- 2 cups long-grain rice, rinsed
- 1 can (15 oz) kidney beans with liquid
- 1 can (13.5 oz) coconut milk
- 1 1/2 cups water
- 3 green onions, whole
- 3 sprigs thyme
- 4 allspice berries
- 1 tsp salt
Make it
- Bring beans with liquid, coconut milk, water, onions, thyme, allspice and salt to a boil.
- Stir in rice, cover and cook on low 20 to 25 minutes until liquid is absorbed.
- Remove the aromatics and fluff with a fork.
