Mediterranean Sheet Pan Cod
Flaky cod roasted with cherry tomatoes, olives and capers.
Ingredients
- 4 cod fillets (6 oz each)
- 2 cups cherry tomatoes
- 1/2 cup pitted olives
- 2 tbsp capers
- 1 red onion, cut in wedges
- 3 tbsp olive oil
- 1 tsp dried oregano
Make it
- Heat oven to 425°F. Toss tomatoes, olives, capers and onion with 2 tbsp oil and roast 10 minutes.
- Nestle in cod, brush with oil, season with oregano and salt.
- Roast 10 to 12 minutes until fish flakes and reaches 145°F.
