Chicken Tinga Tostadas
Smoky shredded chicken in chipotle tomato sauce on crunchy tostadas.
Ingredients
- 1 1/2 lb boneless chicken thighs
- 1 can (14 oz) fire-roasted tomatoes
- 2 chipotle peppers in adobo
- 1 onion, sliced
- 2 cloves garlic
- 8 tostada shells
- 1 cup refried beans
- Shredded lettuce and crema
Make it
- Blend tomatoes, chipotles and garlic. Soften onion in a little oil, add sauce and chicken.
- Cover and simmer 20 minutes until chicken reaches 165°F; shred in the sauce.
- Spread tostadas with beans and top with chicken, lettuce and crema.
