Spring Pea and Mint Soup
A bright green, fresh-tasting soup that comes together in 20 minutes.
Ingredients
- 4 cups fresh or frozen peas
- 1 leek, white part sliced
- 2 tbsp butter
- 4 cups vegetable broth
- 1/3 cup mint leaves
- 1/4 cup plain yogurt
- Pea shoots to garnish
Make it
- Soften leek in butter 5 minutes.
- Add peas and broth and simmer 5 minutes, then add mint and blend smooth.
- Serve with a swirl of yogurt and a pile of pea shoots.
