Sesame Noodles with Crunchy Veggies

Cold noodles in a nutty sesame sauce with cucumber, carrot and herbs.

Ingredients

  • 12 oz spaghetti or wheat noodles
  • 3 tbsp tahini or peanut butter
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 1 tbsp maple syrup
  • 1 cucumber, julienned
  • 1 carrot, shredded

Make it

  1. Cook noodles, rinse under cold water and drain well.
  2. Whisk tahini, soy, vinegar, sesame oil, syrup and a splash of warm water until smooth.
  3. Toss noodles with sauce and vegetables and top with sesame seeds.
