Herbed Couscous with Chickpeas
Fluffy couscous with chickpeas, lemon and a big handful of herbs.
Ingredients
- 1 cup couscous
- 1 1/4 cups boiling vegetable broth
- 1 can (15 oz) chickpeas, rinsed
- 1/3 cup chopped parsley
- 2 tbsp chopped mint
- 1 lemon, juiced
- 3 tbsp olive oil
Make it
- Pour boiling broth over couscous, cover and let stand 5 minutes.
- Fluff with a fork and stir in chickpeas.
- Fold in herbs, lemon juice, olive oil and salt.
