Tabbouleh with Garden Herbs

A fresh, herb-forward salad of parsley, mint, bulgur and lemon.

Ingredients

  • 1/2 cup fine bulgur
  • 3 cups finely chopped parsley
  • 1/2 cup chopped mint
  • 2 tomatoes, finely diced
  • 3 green onions, sliced
  • 1/3 cup lemon juice
  • 1/3 cup olive oil
  • Salt

Make it

  1. Soak bulgur in 1 cup hot water for 15 minutes, then drain well.
  2. Combine with parsley, mint, tomatoes and green onions.
  3. Dress with lemon juice, olive oil and salt; rest 10 minutes before serving.
