Sesame Noodles with Crunchy Veggies
Cold noodles in a nutty sesame sauce with cucumber, carrot and herbs.
Ingredients
- 12 oz spaghetti or wheat noodles
- 3 tbsp tahini or peanut butter
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp toasted sesame oil
- 1 tbsp maple syrup
- 1 cucumber, julienned
- 1 carrot, shredded
Make it
- Cook noodles, rinse under cold water and drain well.
- Whisk tahini, soy, vinegar, sesame oil, syrup and a splash of warm water until smooth.
- Toss noodles with sauce and vegetables and top with sesame seeds.
