Sweet Potato Pie Bars
Silky spiced sweet potato filling on a buttery graham crust, easy to slice.
Ingredients
- 2 cups mashed cooked sweet potato
- 1 1/2 cups graham cracker crumbs
- 5 tbsp melted butter
- 3/4 cup brown sugar
- 2 large eggs
- 3/4 cup evaporated milk
- 1 tsp cinnamon
- 1/2 tsp nutmeg
Make it
- Heat oven to 350°F. Press crumbs and butter into a lined 8-inch pan and bake 8 minutes.
- Whisk sweet potato, sugar, eggs, milk and spices until smooth; pour over the crust.
- Bake 35 to 40 minutes until set in the center (175°F); cool and chill before slicing.
