Chimichurri from the Herb Pot

A punchy green sauce of parsley, oregano and garlic for grilled anything.

Ingredients

  • 1 cup packed parsley
  • 2 tbsp fresh oregano leaves
  • 3 cloves garlic
  • 1/2 cup olive oil
  • 3 tbsp red wine vinegar
  • 1/2 tsp red pepper flakes
  • 1/2 tsp salt

Make it

  1. Finely chop parsley, oregano and garlic by hand or pulse briefly.
  2. Stir in olive oil, vinegar, pepper flakes and salt.
  3. Rest 15 minutes before spooning over grilled meat or vegetables.
