Banana Oat Muffins

Tender, lightly sweet muffins that use up spotty bananas.

Ingredients

  • 3 ripe bananas, mashed
  • 1 1/2 cups all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/3 cup melted butter
  • 1 large egg
  • 1 tsp baking soda
  • 1/2 tsp cinnamon

Make it

  1. Heat oven to 350°F and line a 12-cup muffin tin.
  2. Mix bananas, butter, egg and sugar; stir in flour, oats, soda, cinnamon and a pinch of salt until just combined.
  3. Fill cups and bake 20 to 22 minutes until a toothpick comes out clean.
