Skillet Cornbread
Golden, crisp-edged cornbread baked in a hot cast iron pan.
Ingredients
- 1 1/2 cups cornmeal
- 1/2 cup all-purpose flour
- 2 tbsp sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 1/2 cups buttermilk
- 2 large eggs
- 4 tbsp butter
Make it
- Heat oven to 425°F with butter in a 10-inch cast iron skillet.
- Whisk dry ingredients, then stir in buttermilk, eggs and most of the melted butter from the pan.
- Pour into the hot skillet and bake 20 minutes until golden and a toothpick comes out clean.
