Stuffed Bell Peppers
Colorful peppers stuffed with seasoned beef, rice and tomato, topped with cheese.
Ingredients
- 4 large bell peppers, tops cut and seeded
- 1 lb ground beef
- 1 cup cooked rice
- 1 can (14 oz) diced tomatoes
- 1 tsp Italian seasoning
- 1 cup shredded mozzarella
- Salt and pepper
Make it
- Heat oven to 375°F. Brown beef until it reaches 160°F, then stir in rice, tomatoes and seasoning.
- Fill peppers and set in a baking dish with 1/4 cup water; cover with foil.
- Bake 30 minutes, top with cheese, and bake 10 minutes uncovered.
