Classic Smash Burgers

Thin, crispy-edged patties with melty cheese on soft toasted buns.

Ingredients

  • 1 1/2 lb ground beef (80/20)
  • 4 soft burger buns
  • 4 slices American cheese
  • 1/2 onion, very thinly sliced
  • Pickle slices
  • 2 tbsp mayonnaise mixed with 1 tbsp ketchup
  • Salt and pepper

Make it

  1. Divide beef into 8 loose balls. Heat a cast iron pan or griddle over high heat.
  2. Smash each ball flat with a sturdy spatula, season, and cook 2 to 3 minutes; flip, add cheese, and cook until 160°F inside.
  3. Stack two patties per toasted bun with sauce, onion and pickles.
