Loaded Sweet Potato Fries

Crispy baked sweet potato fries piled with black beans, salsa and lime crema.

Ingredients

  • 3 sweet potatoes, cut into fries
  • 2 tbsp cornstarch
  • 3 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 cup black beans, warmed
  • 1/2 cup pico de gallo
  • 1/3 cup vegan sour cream with lime

Make it

  1. Heat oven to 425°F. Toss fries with cornstarch, then oil, paprika and salt.
  2. Spread in a single layer and bake 25 to 30 minutes, flipping once, until crisp.
  3. Top with beans, pico and lime crema.
