Italian Wedding Soup
Little meatballs, greens and tiny pasta in a comforting chicken broth.
Ingredients
- 1 lb ground beef or pork
- 1/3 cup breadcrumbs
- 1/4 cup grated parmesan
- 1 large egg
- 8 cups chicken broth
- 3/4 cup small pasta
- 4 cups chopped escarole or spinach
- 1 carrot, diced
Make it
- Mix meat, breadcrumbs, parmesan, egg and salt; roll into 3/4-inch balls.
- Bring broth and carrot to a simmer, drop in meatballs and pasta, and cook 10 minutes until meatballs reach 160°F.
- Stir in greens until wilted and season to taste.
